what should i say when i hand a resume into a retail or food/cafe type of shop??i would like to put it into places like, gloria jeans, hudsons coffee, payless shoes,banjos, and bakers delight

I’m a bit confused here…you’ve posted this in the London section, but you’re in Australia…are you intending coming to the UK to work? You’ll need a work permit etc if so…
You won’t find many of the retail chains you mention over here…we have lots of others though 
You simply go in and ask if they have any staff vacancies. If they have, more often than not you’ll be given an application form to complete and return and then you’ll be considered for an interview. It’s very unusual to hire “on the spot” and there’s a lot of competition for these types of jobs. Take your resume with you (we usually call them “CV’s” in the UK), but usually you’ll be given an opportunity to send it in with your completed job application form.
Until you get an interview there’s no really much to say apart from “Have you got any vacancies?” 
Alternatively you can write to or email companies in much the same way and enclose your resume at the same time…
